KEY LIMES. NOT JUST FOR COCKTAILS.
My neighbor grows key limes and was giving them away. I had never tasted one or even had a piece of key lime pie (I know) so I decided to take some off his hands. First, I did a little research to figure out how to use them and to my surprise, besides their distinctive taste, they have rich beneficial properties too with a high level of fiber and contain antioxidants called flavonoids, which are believed to have anti-carcinogenic, antibiotic and detoxifying effects. Wow! So, I made key lime ice cream to get my 10% of Vitamin C. I also squeezed some juice in my water that week, getting a fresh dose of magnesium and potassium. Next was key lime pie. Not sure if I can attribute good digestion with eating a piece of my fresh key lime pie with homemade graham cracker crust, but I can say that it felt good eating it! My husband said he needed two pieces to make sure he got enough fiber. And I did share my ice cream and pie with the neighbor who generously donated his harvest, because there were plenty of flavonoids to go around!
